Chocolate Tart
Chocolate and cherries are a classic combination, I prefer the French heavily brandied cherries to Amarena which can tend to be super cloyingly sweet.
A very thin chocolate shell.
2 brandied cherries in the middle.
Carageenan stabilized soft "ganache" dispensed over it.
Applewood Smoked Chocolate sprinkled on top.
Chocolate and bblack pepper cookies as a garnish...............a slightly garish garnish.
