I despise the word "foodie". A very food savvy client and serious hobbyist engaged me to teach him the basics of sous-videry. It's nice to be able to cough up 3 grand on a whim for a circulator and vacmaster but not so bad on the scope of BS people spend money on these days.
His first lesson was to reproduce the lamb dish he had at the M dinner, Lamb loin on Ceci, piperade jus, spring onions and a croquette. Not bad for a first try.
He is now living sous-vida loca.
