Walter's Lunch.

Over the years I have met several people who have transcended from clients to great friends.
They truly appreciate great food without any bullshit diet restrictions. As a result I have had an amazing rapid exposure to great wine I definitely cannot afford.
One of these groups that have taken me under their wings is the Commanderie de Bordeaux  and in particular Monsieur Rich a.k.a "Sir Walter".
So being a guest member, it is time to give back to Walter and cook  his birthday lunch for the usual suspects.

No doubt the wines will be sick.

Wine Weekend.

One of the best parts of my job is all the wine I get to taste that I know I certainly can't afford. Fun stuff and everyone considers it good luck to pour a glass for the chef. Jumilla is my new favorite dessert wine, has some of the flavor of Banyuls but deeper depth and fruit. Served with Foie Gras and pickled Amarena.

Ridge Monte Bello

10 years of wine, $1900 and a Sockeye Salmon, vertical tastings are a great window into the history of a winemaker. While taste and opinions may vary, when the wine in question exhibits true excellence it takes patience and attention to distinguish between the strengths of the same wine from different years. Ridge Monte Bello 1992 to 2002. Cabernet mostly with Merlot, Petit Verdot and Cabernet Franc. Archived notes from Ridge are Here.
We finished with slow cooked Copper River Salmon, Spiced Carrot Puree, Braised Oxtail and Onion-Red wine caramel.
